5 Delicious Meal-in-a-Jar Recipes
1 – Instant Oatmeal Mix
Makes 14 servings (1/2 cup each)
- • 6 cups quick-cooking oats
- • 1/3 cup dry powdered milk
- • 1/4 cup powdered sugar
- • 1/4 cup packed brown sugar
- • 3 teaspoons ground cinnamon
- • 1 teaspoon salt
- • 1 cup dried fruit or nuts
- 1. In a large bowl, combine all of the above ingredients. Then store in airtight container in a cool dry place for up to 1 month.
- 2. To prepare oatmeal: Place 1/2 cup of mix and add 1/2 cup boiling water or milk to the mix and stir until oats are softened, about 2–3 minutes.
2 – Instant Potato Flakes
Makes 1-pint jar
- • 5 potatoes, peeled and chopped
- • Water
- 1. Cover potatoes with just enough water to cover them. Over medium heat, boil potatoes for 10–15 minutes, or until soft.
- 2. Once potatoes are soft, drain water and mash potatoes until smooth. Do not add any milk or seasonings.
- 3. Set potatoes on dehydrator fruit roll sheets or a parchment paper lined dehydrator tray. Dehydrate on 145°Ffor 6 hours or until dry and all moisture is removed.
- 4. Break the sheets into chunks, put in the blender, and pulse until ground into flakes. The finer the flake, the stickier the potatoes will be when you reconstitute them.
- 5. Add to a glass jar or container and store in a cool, dry area for up to 6 months.
- 6. To flavor soups, casseroles, and dishes add by the tablespoon until desired thickness is met.
For Mashed Potatoes:
Add potato flakes to boiling water, then remove from heat. Add additional ingredients such as cold milk, butter, salt, and seasonings and stir in reconstituted potato flakes.
- 2 servings: 2/3 cup water, 1/4 teaspoon salt, 1 tablespoon butter, 1/4 cup milk, 2/3 cup flakes
- 4 servings: 1 1/3 cups water, 1/2 teaspoon salt, 2 tablespoons butter, 1/2 cup milk, 1 1/3 cup flakes
- 8 servings: 2 2/3 cups water, 1 teaspoon salt, 4 tablespoons butter, 1 cup milk, 2 2/3 cup flakes
- 16 servings: 5 1/3 cups water, 2 teaspoons salt, 8 tablespoons butter, 2 cups milk, 5 1/3 cups flakes
3 – Instant Potato Gnocchi
Makes 4 servings
- • 1 cup mashed potato flakes
- • 1 cup boiling water
- • 1 eggs, lightly beaten
- • 1½ cups organic unbleached flour
- • 1 teaspoon garlic powder
- • 1 tablespoon Italian herb seasoning
- • 1/4 teaspoon salt
- • Water for boiling
- • Pasta sauce of your choice
- • Grated Parmesan cheese, optional
What to do ?
- 1. In a large bowl, add potato flakes and stir in boiling water.
- 2. Add egg, flour, and seasonings. On a lightly floured surface, knead for a few minutes until a soft dough forms. Divide dough into four portions.
- 3. On a floured surface, roll each portion into 1/2-in.-thick ropes; cut into 3/4-in. pieces. Press and roll each piece with a lightly floured fork.
- 4. In a large saucepan, bring water to a boil. Cook gnocchi in batches for 30–60 seconds or until they float. Remove with a slotted spoon.
- 5. Serve with sauce and sprinkle with cheese if desired.
4 – Split Pea Soup
- • 1 (2.75 ounce) package country gravy mix (regular or no-fat)
- • 1 tablespoon chicken bouillon granules
- • 2 tablespoons imitation bacon bits
- • 2 teaspoons. dried celery flakes
- • 2 teaspoons dried minced onion
- • 1 teaspoon dried parsley flakes
- • 1¼ cups dried split green peas
- • 1 bay leaf
What to do ?
- 1. Mix all the ingredients in a bag and store until needed.
- 2. Empty 1 cup of contents for each serving into large saucepan or Dutch oven.
- 3. Add 1 cup water for each serving; heat to boiling, stirring often.
- 4. Reduce heat; cover and simmer for 1 to 1 1/2 hours or until peas are tender, stirring frequently to prevent peas from sticking.
- 5. Remove bay leaf.
- 6. Serve soup.
5 – Shepherd’s Pie
- • 1 package Knorr Cream of Vegetable Soup
- • 1 package chicken gravy mix
- • 1/2 cup milk powder
- • 3/4 cup mixed dried veggies (potatoes, carrots, peas, onions)
- • 1/2 cup beef jerky, venison jerky, chicken jerky, or dehydrated ground beef (you can also use freeze-dried beef crumbles)
- • 1/2 cup or more instant mashed potatoes
- 1. Mix everything but the potatoes in a bag.
- 2. Place potatoes in a second bag. Store until needed.
- 3. To prepare, bring 4 cups of water to boil.
- 4. Add everything but instant mashed potatoes.
- 5. Simmer 7–8 minutes.
- 6. Add instant mashed potatoes, cook for 1 minute, stirring constantly.
- 7. Remove from heat, let sit for minute.
